Basic Cooked Rice

A delightful rice that is ideal alone or served with other dishes.

  cups uncooked rice (preferable converted)

  cups basic stock (chicken, beef, or seafood, depending on recipe)

  cups water
1 1/2
  tablespoons very finely chopped onions
1 1/2
  tablespoons very finely chopped celery
1 1/2
  tablespoons very finely chopped green bell peppers
1 1/2
  tablespoons unsalted butter, melted
1/2
  teaspoon salt
1/8
  teaspoon garlic powder
  A pinch each of white pepper, ground cayenne pepper, and black pepper

  cups water for pressure cooking

Combine all ingredients except 2 cups water in a metal bowl that will fit loosely in a 6-quart pressure cooker. Cover securely with aluminum foil. Pour 2 cups water into pressure cooker. PLace cooking rack or steamer basket in pressure cooker. Place bowl on rack. Close cover securely. Place pressure regulator on vent pipe. COOK 10 MINUTES at 15 pounds pressure with pressure regulator rocking slowly. Let pressure drop of its own accord. Allow rice to steam uncovered for 5 minutes.
